I got hooked on Banana soft serve in the summer. Who would have thought that frozen bananas would be that much better? If you haven’t tried banana soft serve yet, you owe it to yourself to at least give it a shot. You really can’t go wrong – just make sure you freeze the bananas when they are extra ripe and put it in the blender and let it go. Don’t be alarmed if it takes a while to become creamy, but oh baby is it ever worth the wait. As long as you like bananas you won’t be disappointed.
And once you are successfully hooked, start experimenting! Add peanut butter, cocoa, pumpkin, extra sugar, honey . . . the possibilities are endless! If you need somewhere to start, try this espresso version below. Fancy enough to serve at a dinner party, but totally justifiable to make it all for yourself and lick out every last drop. Who are we kidding? I did!
This pudding is to die for! Super creamy and just a perfect balance of espresso and sweetness. No one will guess what its made of when you serve it for dessert at your next dinner party!
Ingredients (1 serving)
- 1 large banana, frozen
- 2 tbsp coffee
- 1/2 tsp vanilla
- 1/2 tsp instant coffee granules
- 1 tbsp pureed dates
- 1 package Stevia
- Place all ingredients in a blender and process until smooth and creamy. You can adjust the sweetness by adding a second package of Stevia, or add more coffee if you prefer more of an espresso flavour.
- Serve immediately.
I called it pudding because it doesn’t end up quite as thick as banana soft serve. I experimented with the recipe using non-frozen bananas, but liked the result much better when they were frozen first. Try them both and see which one you prefer. Experimenting in the kitchen is the best part!
